Vegetable Hakka Noodles (Chow Mein)

The recipe for Hakka noodles with vegetables is very easy to make. As a first step you need vegetables of your choice. I love red onions, carrots, green beans, different colors of peppers, cloves of garlic, red chillies, and cabbage. Wash them well, cut them into very thin slices and keep them in the plate. You can see examples in the pictures below.

We definitely need hakka noodles or chowmein noodles for this recipe. I use the Asian Chowmeen noodles. They are perfect in length and taste and can easily be found in any Asian store.

You start with water in a large saucepan, add a pinch of salt and bring to a boil. As soon as the water boils, add your noodle pack and let it cook for as long as indicated on the noodle pack. It usually takes no more than 5-7 minutes. Keep an eye on the pasta and don't overcook it. Meanwhile, take another pan and add 2-3 tablespoons of olive oil. Once the oil is hot enough add finely chopped garlic, give it a good toss and wait until the garlic is lightly brown (~ 3 minutes), then add all the chopped vegetables to the pan and add about 4-5 Let simmer for minutes. We don't have to cook vegetables thoroughly, just a little so that they don't taste completely raw and crispy. Add salt to taste, pepper, 2 tablespoons of vinegar, 2 tablespoons of tomato ketchup, 3 tablespoons of dark soy sauce, and some chilli oil if you like hot noodles (we don't use them because we have fresh chillies). Mix everything well together with the vegetables.

Finally, add the already cooked pasta to the pan and deglaze with a little water. Mix well and the delicious street style Hakka noodles are now ready to serve.
